About the Recipe

Who said brownies can’t be good for you? These rich, fudgy, sweet potato brownies prove that indulgence and wellness can share the same plate. Made with simple pantry ingredients, this beginner-friendly recipe is perfect for those cozy, stay-in moments — or anytime you want something sweet that still loves you back.

Ingredients

  • 1 cup mashed cooked sweet potato (about 1 large)

  • ½ cup unsweetened applesauce

  • ¼ cup pure maple syrup

  • 1 tsp vanilla extract

  • ½ cup oat flour (or blended rolled oats)

  • ¼ cup unsweetened cocoa powder

  • ½ tsp baking powder

  • ¼ tsp salt

  • ¼ cup dark chocolate chips or cacao nibs (optional)

Preparation

  1. Preheat oven to 350 °F (175 °C). Line an 8×8 pan with parchment.

  2. In a bowl, whisk together mashed sweet potato, applesauce, maple syrup, and vanilla.

  3. Add oat flour, cocoa powder, baking powder, and salt. Stir until smooth.

  4. Fold in chocolate chips if using.

  5. Spread batter evenly into pan and smooth the top.

  6. Bake 28–32 minutes, until set and slightly pulling from the edges.

  7. Cool at least 20 minutes before slicing — they firm up as they cool.

Tips and Variations

  • Sprinkle a few extra chips or crushed walnuts on top before baking.

  • Dust with cocoa powder after cooling for a rich finish.

From My Kitchen to Yours

When I first started experimenting with WFPB desserts, I was craving something chocolatey that didn’t undo all my progress. These brownies hit the spot — sweet enough to satisfy, nutrient-dense enough to feel proud of. If you’re just starting your plant-based journey, this is the kind of “win” that keeps you going.🌿
