Some nights, you just need a double dose of comfort. This combo brings that warm, “home-cooked hug” vibe — plant-powered, creamy, and satisfying.
Ingredients
Mac:
1 cup soaked cashews
1 cup plant milk
2 tbsp nutritional yeast
1 tsp lemon juice
½ tsp garlic powder
salt to taste
8 oz whole-grain pasta.
Chili:
1 onion
2 cups diced sweet potato
1 can black beans
1 can tomatoes
1 tsp smoked paprika
½ tsp cumin
salt and pepper.
Preparation
Cook pasta. Blend mac ingredients until silky; warm and stir into pasta.
For chili, sauté onion and sweet potato 5 min. Add rest; simmer 25 min.
Serve together — chili ladled beside or over mac.

Make extra sauce — it freezes perfectly for weeknight meals.
