Creamy Cashew Mac + Smoky Sweet Potato Chili

About the Recipe

Some nights, you just need a double dose of comfort. This combo brings that warm, “home-cooked hug” vibe — plant-powered, creamy, and satisfying.

Ingredients

Mac: 

  • 1 cup soaked cashews

  • 1 cup plant milk

  • 2 tbsp nutritional yeast

  • 1 tsp lemon juice

  • ½ tsp garlic powder

  • salt to taste

  • 8 oz whole-grain pasta.


Chili: 

  • 1 onion

  • 2 cups diced sweet potato

  • 1 can black beans

  • 1 can tomatoes

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • salt and pepper.

Preparation

  • Cook pasta. Blend mac ingredients until silky; warm and stir into pasta.

  • For chili, sauté onion and sweet potato 5 min. Add rest; simmer 25 min.

  • Serve together — chili ladled beside or over mac.

Tips and Variations

Make extra sauce — it freezes perfectly for weeknight meals.
