This chili is my go-to “clean slate” meal — warm, filling, and full of fiber to kick off a healthy week.
Ingredients
1 onion, 2 cloves garlic
1 zucchini, 1 bell pepper, 1 carrot
1 can black beans, 1 can kidney beans, 1 can tomatoes
1 tbsp chili powder, 1 tsp cumin, salt
Preparation
Sauté veggies; add spices; stir in beans and tomatoes; simmer 30 min.
Tips and Variations
Top with avocado or cilantro.
