Ingredients

  • 8 oz whole-grain pasta

  • 1 onion + 2 cups mushrooms, sliced

  • 2 cups veggie broth

  • 1 cup plant milk

  • 2 tbsp soy sauce, 1 tbsp Dijon, 1 tsp paprika

  • 1 tbsp cornstarch in 2 tbsp water

Preparation

  • Sauté onion + mushrooms.

  • Add broth, milk, seasonings; bring to simmer.

  • Add pasta; cook till tender. Stir in cornstarch slurry; thicken.
