Ingredients
8 oz whole-grain pasta
1 onion + 2 cups mushrooms, sliced
2 cups veggie broth
1 cup plant milk
2 tbsp soy sauce, 1 tbsp Dijon, 1 tsp paprika
1 tbsp cornstarch in 2 tbsp water
Preparation
Sauté onion + mushrooms.
Add broth, milk, seasonings; bring to simmer.
Add pasta; cook till tender. Stir in cornstarch slurry; thicken.

Garnish with parsley and cracked pepper.
